This wine is obtained through the vinification of selected, cultivated grapes
in compliance with the disciplinary measure of organic agriculture CE 834/07 e
CE 889/08.

Vinification
Cryomaceration at 5 ° for the conservation of the primary aromas of the grape.
The must macerates with the skins for one night at a low temperature without starting the alcoholic fermentation and another three days with fermentation to extract color and tannins thanks to the alcoholic component. The subsequent second fermentation takes place in the bottle, according to the Ancestral method; the aging of the wine is continuous and due to the natural fermentation in the presence of its own yeasts which, once dead, release the substances contained within them to the wine. The bottles remain in refinement for at least 10/12 months and no disgorgement takes place.

Organoleptic characteristics
Creamy mousse with fine and persistent bubbles, ruby red color but slightly cloudy due to suspended yeasts. Aromas of ripe red fruit tending to spices. On the palate it is dry, full and very decisive with good acidity. It goes well with dishes of a certain commitment and red meats, cured meats and cheeses. Serve at 12-14 ° C.
