Harvest
Generally in mid-August when the grape, not perfectly ripe, retains the right acidity; the grapes are harvested strictly by hand.
Vinification
Only the very first part of the must, immediately separated from the marc, is used to prepare the base of this sparkling wine, then fermented at a controlled temperature. In spring, its second fermentation takes place in the bottle. The bottles are then placed in a cool cellar where the rest phase of about 36 months takes place. Before being put on sale, the bottles are placed in pupitre and turned manually to ensure that the yeasts reach the position of the cap. Finally, the “degorgement”, also called disgorgement, is carried out, with the addition of the “liqueor de spedition”, very respectful of the wine of origin.

Organoleptic characteristics
Intense straw yellow color, it has a fine and persistent perlage; the typical scents of bread crust, combined with different scents such as licorice and spices in general, anticipate a dry, harmonious and elegant taste. Excellent wine to be used throughout the meal, with savory first courses and second courses based on fish; also ideal with aged cheeses. Serve at 6-8 ° C.
