Harvest
Generally in mid-September, the grapes are harvested strictly by hand.

Vinification
The bunches, healthy and intact, are placed in small perforated boxes, each containing 7 kg. of grapes, and subsequently placed in a controlled humidity room for 4 months; in this period the grapes wither determining the concentration of sugars and aromas. In December the grapes are pressed with a small press obtaining a yield from grape to must much lower than 30%. Alcoholic fermentation takes place in French oak barrels and, being in the middle of winter, the temperatures remain naturally low; after two years of aging, the wine is bottled and put on sale.

Organoleptic characteristics : With a golden yellow color with amber reflections, it has pleasantly intense and harmonious aromas reminiscent of very ripe fruit such as yellow apple, banana, apricot, dried fruit such as almond and fig; on the palate it is velvety, pleasantly sweet, harmonious, with hints of vanilla and noble spices. A meditation wine to be served in small glasses with cakes and dry biscuits, or with blue cheeses. Serve at 12-14 ° C.
