Grapes harvested by hand ,generally around the last decade of September

The product is made from organic grapes, from the foothill area between Scandiano and Canossa. Fermentative maceration is slightly prolonged to give body and enrich the wine with aromas. Sparkling is done with its must kept cold, the stay on the fine lees of fermentation lasts about 120 days, during which the body is refined and goes to balance the roughness of the tannins, freshness to gives roundness, resulting in a product that combines the freshness of sparkling wine with the body of a great red. Sparkling also enhances its red fruit and light spicy aromas.

Organoleptic characteristics
Deep ruby red in color, it is characterized by aromas of ripe red fruit, cherry, and spices. The bubble is fine and delicate, the slightly tannic palate with an important structure and body of the wine is combined with a pleasant freshness. A fine and elegant wine to pair with dishes related to the Reggio Emilia tradition, such as erbazzone gnocco fritto and cured meats, as well as with grilled and non-grilled red meats.
