SPERGOLA SPARKLING WINE
Generally in mid-August when the grape, not perfectly ripe, retains the right acidity; the grapes are harvested strictly by hand.
The must is immediately separated from the pomace so as not to extract the color; the fermentation takes place in vats at a controlled temperature, developing the thiolic and delicate aromas typical of the spergola. After a few months of rest, the wine is placed in an autoclave where, at very low temperatures, the refermentation with the Charmat method takes place, making it sparkling. Before being sold, the wine remains in dark and cool rooms for a month.

Pale yellow in color with greenish reflections, it has a fine and persistent perlage; the typical aromas, reminiscent of green fruit, anticipate a dry, harmonious and elegant taste. Excellent as an aperitif, with light first courses and second courses based on fish, especially with shellfish, with fresh or slightly seasoned cheeses. Serve at 8-10 ° C.
